7 Health Benefits To Eating Fermented Food

Most of us eat fermented foods without even knowing it. Condiments you use such as ketchup and soy sauce, the sauerkraut or pickles you might add to a sandwich, the yogurt you eat for breakfast, and the beets you toss in your salad are all examples of fermented foods.

Fermentation is nothing new. In fact, people all over the world have been preserving their foods by fermentation for thousands of years. Archaeologists have found evidence of fermented foods and drinks in Babylon (5000 BC), Egypt (3150 BC), South America (2000 BC), and Sudan (1500 BC). Unfortunately, while our grandparents and great grandparents may have had cellars full of jars of pickles, beets and sauerkraut, fermentation is a lost art for most Americans today.

So what exactly is this process? The technical definition of fermentation by is “an anaerobic (without oxygen) cellular process in which organic foods are converted into simpler compounds and chemical energy (ATP) is produced.”

Basically when fermentation occurs, a food’s sugars and carbohydrates are converted into something else. Grains turn into beer, carbohydrates turn into carbon dioxide to leaven bread, and grape juice turns into wine. The most common fermented foods and drinks are wine, beer, pickles, yogurt, beets, sauerkraut, certain cheeses, kefir, sour cream, sourdough bread, miso, kimchi and kombucha.

Fermentation expert Sandor Katz offers another definition in his book The Art of Fermentation. He describes fermented foods as “the flavorful space between fresh and rotten.”

Whichever definition you prefer, there is no denying that fermented foods should have an important place in your diet for both health and efficiency reasons. In today’s world of convenience and speed, however, many of us have lost the art – and, as a result, the benefits – of fermented foods. We need to get it back.

Here are some of the reasons to include fermented foods in your diet:
  1. Fermentation is an inexpensive and energy efficient form of preservation.
  2. Fermented foods can help to reduce high cholesterol levels in our blood.
  3. Fermented foods have beneficial bacteria that are important for digestion and stomach health.
  4. Fermented products often contain higher levels of vitamins – especially thiamine, nicotinic acid, biotin and riboflavin — and proteins. According to a study published by the International Journal of Food Science & Technology, for instance, fermented dairy products have an increased level of folic acid (important for pregnant women) as well as significant amounts of B vitamins, riboflavin and biotin.
  5. Fermented foods often contain a higher level of convertible energy than non-fermented foods of the same weight.
  6. Fermented foods are rich in enzymes, which help the body digest and absorb the food you eat.
  7. Fermentation increases the taste and flavor of many foods.
You can purchase naturally fermented foods at some retail stores or at your local growers’ market, but the best way to reap all the cost and health advantages they offer is by making them yourself. You will find that with some practice, fermenting foods for your own use can be an easy and gratifying process. For one thing, you don’t do most of the work, the healthy bacteria does!

The general steps of fermenting vegetables include:
  • chopping the vegetables (such as cabbage, carrots and onions) in any way you wish.
  • mixing in salt (and sometimes whey).
  • mashing and/or squeezing the vegetables until all their liquid runs out.
  • transferring the mixture into a glass jar (avoid metal or plastic containers).
  • pressing the vegetables into the jar so that they are submerged in their own liquid (with the brine at the top of the jar).
  • covering the jar and letting the jar sit for several days. Taste test some of the kraut after two to five days. If you are not pleased with the flavor, let the jar sit another few days and then taste the mixture again. It really is up to you and your taste preferences.
Here are some additional tips from author and fermentation expert Katz:

Check the jar regularly to make sure the veggies are still submerged, adding water to the jar if necessary.

You may need to periodically release the pressure that builds up in the jar by opening and shutting the lid.

It is common for surface molds to develop. If they do, simple scrape away any kraut that is discolored and add them to your compost pile. The kraut below is safe to eat because the high acidity level created in fermentation kills the organisms that could cause food-poisoning.

Fermented foods are healthy, affordable and easy to make. That’s a pretty unbeatable combination, don’t you think? There are a number of helpful videos online about how to ferment foods at home.

Devastating Report: Cancer Misdiagnosed in Over 1.3 Million Cases

The National Cancer Institute has just confirmed via a newly released report that the ‘war on cancer’ over the last 30 years has led to more than 1.3 million people (primarily women) being wrongly diagnosed with cancer. This is not to mention that cancer rates have been continuously rising while incredibly expensive cancer treatments are failing.
Breast cancer diagnosis has been found to be especially suspect. Many of the ‘lumps’ found in women’s breasts are completely normal and benign. What’s more, constant screening with mammography equipment actually exposes women to harmful radiation that can cause cancer, as evidenced by a UCLA study which shows how radiation treatments promotes malignancy in cancer cells instead of eradication. These breast screenings are very carcinogenic, but, as if to add insult to injury, thousands of women are misdiagnosed with breast cancer every year.
The recent study published by the Journal of the American Medical Association has a hopeful subtitle: Overdiagnosis and Overtreatment in Cancer: An Opportunity for Improvement. At least they are calling to light the obvious obsession we have had with chemotherapy and radiation for treatment of cancer. And now they have called into question the means by which it is diagnosed.
“Over the past 30 years, awareness and screening have led to an emphasis on early diagnosis of cancer. Although the goals of these efforts were to reduce the rate of late-stage disease and decrease cancer mortality, secular trends and clinical trials suggest that these goals have not been met; national data demonstrate significant increases in early-stage disease, without a proportional decline in later-stage disease.”
The study also points out that early screenings were meant to lessen the burden of those who suffer in late stage cancer, but the screenings have simply not done their job. Not all cancers lead to death, and by being overly paranoid about the medical diagnosis, many radical treatments, including the aforementioned tools most often utilized by mainstream medicine, are often prescribed.
“The practice of oncology in the United States is in need of a host of reforms and initiatives to mitigate the problem of overdiagnosis and overtreatment of cancer, according to a working group sanctioned by the National Cancer Institute.
Perhaps most dramatically, the group says that a number of premalignant conditions, including ductal carcinoma in situ and high-grade prostatic intraepithelial neoplasia, should no longer be called “cancer.”
Instead, the conditions should be labeled something more appropriate, such as indolent lesions of epithelial origin (IDLE), the working group suggests.”
This study gives us an opportunity to look at alternative methods of both diagnosing and treating cancer, which are numerous. Preventative actions do not cause cancer as chemo and radiation do. Consuming more cancer-fighting foods or changing a person’s exercise habits are two methods to prevent and even reverse cancer. Not to mention the numerous herbs and phytonutrients which have proven to prevent and treat any number of cancers.
These natural solutions are probably just as effective as annual screenings, and are definitely safer. Taking better care of our health means we won’t develop cancer, and also enhances our overall quality of life in the here and now.

10 Drugs That May Cause Memory Loss

For a long time doctors dismissed forgetfulness and mental confusion as a normal part of aging. But scientists now know that memory loss as you get older is by no means inevitable. Indeed, the brain can grow new brain cells and reshape their connections throughout life.

Most people are familiar with at least some of the things that can impair memory, including alcohol and drug abuse, heavy cigarette smoking, head injuries, stroke, sleep deprivation, severe stress, vitamin B12 deficiency, and illnesses such as Alzheimer's disease and depression.
But what many people don't realize is that many commonly prescribed drugs also can interfere with memory. Here are 10 of the top types of offenders.

1. Antianxiety drugs (Benzodiazepines)

Why they are prescribed: Benzodiazepines are used to treat a variety of anxiety disorders, agitation, delirium and muscle spasms, and to prevent seizures. Because benzodiazepines have a sedative effect, they are sometimes used to treat insomnia and the anxiety that can accompany depression.
Examples: Alprazolam (Xanax), chlordiazepoxide (Librium), clonazepam (Klonopin), diazepam (Valium), flurazepam (Dalmane), lorazepam (Ativan), midazolam (Versed), quazepam (Doral), temazepam (Restoril) and triazolam (Halcion).
How they can cause memory loss: Benzodiazepines dampen activity in key parts of the brain, including those involved in the transfer of events from short-term to long-term memory. Indeed, benzodiazepines are used in anesthesia for this very reason. When they're added to the anesthesiologist's cocktail of meds, patients rarely remember any unpleasantness from a procedure. Midazolam (Versed) has particularly marked amnesic properties.
Alternatives: Benzodiazepines should be prescribed only rarely in older adults, in my judgment, and then only for short periods of time. It takes older people much longer than younger people to flush these drugs out of their bodies, and the ensuing buildup puts older adults at higher risk for not just memory loss, but delirium, falls, fractures and motor vehicle accidents.
If you take one of these meds for insomnia, mild anxiety or agitation, talk with your doctor or other health care professional about treating your condition with other types of drugs or nondrug treatments. If you have insomnia, for instance, melatonin might help. Taken before bedtime in doses from 3 to 10 mg, melatonin can help to reestablish healthy sleep patterns.
Be sure to consult your health care professional before stopping or reducing the dosage of any benzodiazepine. Sudden withdrawal can trigger serious side effects, so a health professional should always monitor the process.

2. Cholesterol-lowering drugs (Statins)

Why they are prescribed: Statins are used to treat high cholesterol.
Examples: Atorvastatin (Lipitor), fluvastatin (Lescol), lovastatin (Mevacor), pravastatin (Pravachol), rosuvastatin (Crestor) and simvastatin (Zocor).
How they can cause memory loss: Drugs that lower blood levels of cholesterol may impair memory and other mental processes by depleting brain levels of cholesterol as well. In the brain, these lipids are vital to the formation of connections between nerve cells — the links underlying memory and learning. (The brain, in fact, contains a quarter of the body's cholesterol.)
A study published in the journal Pharmacotherapy in 2009 found that three out of four people using these drugs experienced adverse cognitive effects "probably or definitely related to" the drug. The researchers also found that 90 percent of the patients who stopped statin therapy reported improvements in cognition, sometimes within days. In February 2012, the Food and Drug Administration ordered drug companies to add a new warning label about possible memory problems to the prescribing information for statins.
Alternatives: If you're among the many older Americans without known coronary disease who are taking these drugs to treat your slightly elevated LDL ("bad") cholesterol and low HDL ("good") cholesterol), ask your doctor or other health care provider about instead taking a combination of sublingual (under-the-tongue) vitamin B12 (1,000 mcg daily), folic acid (800 mcg daily) and vitamin B6 (200 mg daily).

Si tiene insomnio, por ejemplo, la melatonina podría ayudar. Si la toma antes de irse a acostar en dosis de 3 a 10 mg, la melatonina puede ayudar a restablecer patrones saludables de sueño.

1. Polar bears, seals and walruses along the Alaska coastline are suffering from fur loss and open sores

Wildlife experts are studying whether fur loss and open sores detected in nine polar bears in recent weeks is widespread and related to similar incidents among seals and walruses.
The bears were among 33 spotted near Barrow, Alaska, during routine survey work along the Arctic coastline. Tests showed they had “alopecia, or loss of fur, and other skin lesions,” the U.S. Geological Survey said in a statement.
2. There is an epidemic of sea lion deaths along the California coastline…

At island rookeries off the Southern California coast, 45 percent of the pups born in June have died, said Sharon Melin, a wildlife biologist for the National Marine Fisheries Service based in Seattle. Normally, less than one-third of the pups would die. It’s gotten so bad in the past two weeks that the National Oceanic and Atmospheric Administration declared an “unusual mortality event.”

3. Along the Pacific coast of Canada and the Alaska coastline, the population of sockeye salmon is at a historic low. Many are blaming Fukushima.

4. Something is causing fish all along the west coast of Canada to bleed from their gills, bellies and eyeballs.

5. A vast field of radioactive debris from Fukushima that is approximately the size of California has crossed the Pacific Ocean and is starting to collide with the west coast.

6. It is being projected that the radioactivity of coastal waters off the U.S. west coast could double over the next five to six years.

7. Experts have found very high levels of cesium-137 in plankton living in the waters of the Pacific Ocean between Hawaii and the west coast.

8. One test in California found that 15 out of 15 bluefin tuna were contaminated with radiation from Fukushima.

9. Back in 2012, the Vancouver Sun reported that cesium-137 was being found in a very high percentage of the fish that Japan was selling to Canada…

• 73 percent of mackerel tested
• 91 percent of the halibut
• 92 percent of the sardines
• 93 percent of the tuna and eel
• 94 percent of the cod and anchovies
• 100 percent of the carp, seaweed, shark and monkfish

10. Canadian authorities are finding extremely high levels of nuclear radiation in certain fish samples…

Some fish samples tested to date have had very high levels of radiation: one sea bass sample collected in July, for example, had 1,000 becquerels per kilogram of cesium.

“Look at what’s going on now: They’re dumping huge amounts of radioactivity into the ocean — no one expected that in 2011,” Daniel Hirsch, a nuclear policy lecturer at the University of California-Santa Cruz, told Global Security Newswire. “We could have large numbers of cancer from ingestion of fish.”

Iodine-131, for example, can be ingested into the thyroid, where it emits beta particles (electrons) that damage tissue. A plague of damaged thyroids has already been reported among as many as 40 percent of the children in the Fukushima area. That percentage can only go higher. In developing youngsters, it can stunt both physical and mental growth.

 Among adults it causes a very wide range of ancillary ailments, including cancer.

Cesium-137 from Fukushima has been found in fish caught as far away as California. It spreads throughout the body, but tends to accumulate in the muscles.

Strontium-90’s half-life is around 29 years. It mimics calcium and goes to our bones.

If you haven’t been to a California beach lately, you probably don’t know that the rocks are unnaturally CLEAN – there’s hardly any kelp, barnacles, sea urchins, etc. anymore and the tide pools are similarly eerily devoid of crabs, snails and other scurrying signs of life… and especially as compared to 10 – 15 years ago when one was wise to wear tennis shoes on a trip to the beach in order to avoid cutting one’s feet on all the STUFF of life – broken shells, bones, glass, driftwood, etc.

There are also days when I am hard-pressed to find even a half dozen seagulls and/or terns on the county beach.

You can still find a few gulls trolling the picnic areas and some of the restaurants (with outdoor seating areas) for food, of course, but, when I think back to 10 – 15 years ago, the skies and ALL the beaches were literally filled with seagulls and the haunting sound of their cries both day and night…

NOW it’s unnaturally quiet.

The radiation emitted from all these rods, if they are not continually cool and kept separate, would require the evacuation of surrounding areas including Tokyo. Because of the radiation at the site the 6,375 rods in the common storage pool could not be continuously cooled; they would fission and all of humanity will be threatened, for thousands of years.”

With chambers and blood-red insides, the physical appearance of pomegranates isn’t the only thing that ties them to the human heart. Research indicates these in-season delights are a heart-protective food that could even undo the bodily damage caused by junk food.

Researchers from Spain tested a new supplement on pigs. The supplement was made with polyphenols found in pomegranates – antioxidant compounds which are credited with numerous health benefits including heart protection.

The researchers first fed the pigs—whose cardiovascular systems are similar to ours—a diet of fatty, damaging foods. Unsurprisingly, this diet damaged the lining of their blood vessels. Damage to this lining, the endothelium, is often the first step in atherosclerosis, or the hardening of the arteries which leads to heart attacks and strokes.

This fatty diet left the pigs with less elastic vessels and caused them to produce less nitric acid, a gas that keeps vessels healthy in animals and humans alike. These changes are similar to the ones experienced in people who eat an unhealthy diet.

After the intentional vascular damage was done, the pigs were fed a daily dose of Pomanex, a supplement containing 200 mg of polyphenols. The researchers said the punicalagin-containing supplement was able to repair the damage.
“Enriching a diet with pomegranate polyphenols can help in preventing and retarding endothelial dysfunctions, which are among the first signs of atherosclerosis and strokes,” said researcher Dr. Lina Badimon.
Though while this study focuses on a specific product, this isn’t the first study to demonstrate the heart-healthy benefits of pomegranates in general – and other such studies weren’t a blatant plug for a man-made supplement.

A study published in the American Journal of Clinical Nutrition indicated pomegranate juice was able to reduce oxidative stress and plaque on arterial walls. Another found men taking pomegranate juice were able to reduce the plaque in their arteries by 30% in a year’s time. The control group, who didn’t take pomegranate juice, saw a plaque increase of 9%.

One other study not related to heart health found that pomegranate juice can significantly improve memory and brain health. In addition to heart protection and memory improvement, they can fight breast cancer and Candida albicans.
Pomegranates are in season right now, and you can absolutely reap their benefits without a fancy supplement.

My Rather Personnel Confession.

What is our strongest motivator as we live our lives?

The most fundamental and potent motivator facing us all individually and collectively as a species is, I feel, Insecurity!

Think about it. Its presence can be subtle which may lead to denial but really, just think about it for a moment. What truly motivates us as we go through our day? What is that often driving force that pushes us? Unhuuuh! J  The need to succeed, or perhaps more truthfully, to be recognised as successful. We see it in ourselves as individuals but also we see it in the individual behaviour of countries – Yes? Absolutely!

When I was a banker I was driven to be the best and I ended up on Wall Street. When I was a realtor I was driven in the same way and was equally successful. Was I any happier deep down in side myself? On the surface maybe. I have always felt the need to be challenged otherwise life gets boring! However, deep down - no. Hhhhhmmmm - why not? Basically, there was still that gnawing feeling of insecurity – and IT was driving me!

Again, those who we see as successful and who have lots of money and/or prestige still seem to be driven to earn more money or both money AND prestige.

Let us look at our political world. If ever there was an example of insecurity! It IS a driving force and it manifests in criticizing and trying to put down the other person or ‘Oposition’.What is driving this emotion? The need to be seen as successful including by the constituents – perhaps, especially by the constituents! It IS an emotion – it’s not really rational, and in my opinion it creates a very negative environment in which to live and work in.

I feel that no matter how successful you/I appear to be there is still – all to often -  that measure of insecurity no matter how subtle. It is still sitting there in the background pushing our buttons ever so gently – but it is, more often than not, there. Bugger! J

Maybe it’s only me feeling this? Even as I write this for publication there is a subtle voice inside of me saying ‘Will this article be recognised as a good one? Will I be given credit for this insight?’ I can’t deny it – that feeling is still there and it drives me to be ‘the best that I can be’! That can certainly be seen as a positive attitude, and it is. Nothing wrong with that - and in much of our day-today living it can be the imprint that moves us sometimes subtly or with greater passion. However, I still feel that maybe deeper down, there is often – not always by any means - that gnawing feeling of neediness – of insecurity – however subtle.

I’ll leave it with you to reflect on. It may open a door, if recognised, and could lead to a sense of greater inner peace moving you beyond any neediness. I am certainly working on it since I recognised this ‘Insecurity’ element within myself.

A major concern in an emergency or survival situation is the tending of injuries and illnesses, but it is often difficult to lay in supplies for these potential needs.

Many of the “conventional” supplies for health care are controlled by prescription requirements, or access is otherwise limited to healthcare professionals. To be perfectly honest, many modern techniques are not the best options available, and are more dictated by the current whims of large pharmaceutical companies than by real world efficacy.

Fortunately, there are time-honored traditional means of treating almost every injury or illness known to man, and many of these remedies and treatments revolve around a group of substances known as essential oils. Soon, the ability to tend to your own health needs may very well become a matter of every day necessity as opposed to a prep for extreme situations.

My wife is an aficionado of essential oils, and by association I have absorbed a small amount of the vast store of knowledge she has acquired through several years of research and experimentation. At times, our kitchen table looks like a chemistry lab, as she perfects a new formula with either a specific or a general purpose. Some of her advanced projects have yielded relief for psoriasis and eczema, and have produced hand sanitizers which are totally effective and yet gentle enough for sensitive children who can’t even be in the same room with commercial alcohol based sanitizers. The field of study is vast and multi-faceted, to say the least. For my part, I have tried to pick her brain and come up with a short list of common injuries and ailments and their essential oil treatments.

First, the caution and the disclaimer: Not all essential oils are created equal! Through the years, the fragrance industry has co-opted much of the essential oils industry. Many “oils” are mere fragrances with absolutely no medicinal value, although they smell great.

What you are looking for is pure essential oil. Words to look out for include “aroma,” reconstitution,” “isolates” and “nature identicals”. Only pure oils extracted by steam distillation, solvent extraction, expression or maceration are suitable for your first aid kit. Buy from a health food store or reputable online dealer; steer clear of vendors who cater to the smelling good market. True essential oils are so concentrated that they must be used with a base or carrier oil, and many seed and vegetable oils, including sunflower, olive, corn and grape seed oil can be used for this purpose.

Here are my picks for the essential oil beginner to get your first aid kit going:
  1. For grazes and abrasions you will need lavender oil. Cleanse the affected area with five drops of this oil diluted in warm water. After cleansing, apply one drop of straight oil and allow the injury to heal.
  2. For bruises and bumps prepare two bowls of water, a hot and a cold. To each bowl add two drops of lavender oil, three of rosemary oil, and one of geranium oil. Soak a washcloth in each bowl and apply alternately. Following this treatment, add two drops of geranium oil, two of rosemary, and one of lavender diluted in a teaspoon of vegetable oil and apply directly to the affected area.
  3. For scalds and burns, including electrical and corrosive, lavender, yarrow, and Roman or German chamomile are effective treatments on their own or in synergy. For common burns, first cool the area with ice cold water for at least 10 minutes and then apply two drops of pure oil directly to the burn area. Then place 5 drops of oil to a clean dressing and loosely wrap the area. The blend for a synergistic treatment is 10 drops lavender, 10 of German chamomile, and 5 of Roman chamomile, two drops of this blend can be added to a tablespoon of Aloe Vera and applied three times a day to a burn. For corrosive burns, first neutralize the compound and wash thoroughly before applying your oil or blend. Take 100mg of vitamin C each day to aide in healing.
  4. For cuts and wounds, clean with warm water with five drops of lavender oil and two of tea tree oil. This is an effective disinfectant and antibiotic. Apply three drops of lavender oil to a sterile gauze pad and place it over the wound, change this dressing twice a day.
  5. To control bleeding apply a compress a drop of geranium oil, one of Lemon oil, and one of chamomile. Apply direct pressure, and elevate the limb if needed.
  6. For an abscess make a compress with two drops of lavender oil, two of tea tree oil, and three of chamomile and apply it to the swollen area twice a day. For a dental abscess put a drop of chamomile oil on a cotton ball and apply to the affected tooth or gum area and also rub the cheek and jaw with three drops of lavender oil and two of tea tree diluted in a teaspoon of vegetable oil.
  7. For toothache place a drop of clove oil on a cotton ball and apply to the tooth. Massage the cheek and jaw with one drop of clove oil, three of chamomile, and one of lemon oil diluted in one teaspoon of vegetable oil.
  8. Blisters receive a drop of lavender oil and a drop of chamomile directly to the blister. Carefully pat the oils in.
  9. General headaches can be treated by massaging the temples and the base of the neck with one drop of a blend consisting of three drops lavender oil and one of peppermint oil in one drop of vegetable oil. For nervous or tension headaches substitute one drop of chamomile for the one drop of peppermint.
  10. To kill a cold at early onset, take 3 drops of oil of oregano diluted in the beverage of your choice. This really kick starts the immune system. Use this in conjunction with large doses of Vitamin C.
  11. Hay fever can be relieved by putting two drops of chamomile oil, two of lemon, and one of lavender on a tissue and inhaling.
  12. To alleviate upper abdominal pain dilute three drops of peppermint oil and two of clove oil in a teaspoon of vegetable oil and massage over the painful area in a clockwise motion. For lower abdominal pain dilute two drops thyme oil and three of eucalyptus oil in a teaspoon of vegetable oil and apply in the same manner.
These are just a very few of the uses for essential oils in common first aid applications. There are hundreds more, and a good book on the subject is an absolute must for any preparedness library. Now is the time to do your homework and gather your supplies.

In addition, essential oils can be used in aromatherapy, in homemade cleaning products, insect repellents, and in personal hygiene products. The health, psychological and emotional benefits are tremendous. Essential oils are nature’s pharmacy, and will care for you when the corner pharmacy’s doors are closed.
